Madison (University Heights): Fresh tuna minced with red bell pepper is served atop thin avocado slices, the entire affair wrapped in translucent ribbons of cucumber. A shrimp tempura crown, mixed micro-greens, sprinkles of toasted sesame seeds and dabs of sour crème fraîche complete the presentation of this light and exquisite Tuna Tartare.

Kindred (South Park) Unripe jackfruit imbues the slightly sweet tomatoey BBQ sauce with a rich meaty flavor. Curls of pulled soy with a consistency of – and resemblance to – thick slices of pork belly, are served “wet” with tart dill pickles, onion and a green chili aioli between slices of crunchy grilled sourdough bread. A side of fresh-from-the-fryer sweet potato chips perfectly compliments the Memphis BBQ Jackfruit Sandwich.

Parc Bistro-Brasserie (Bankers Hill): Frisee Lardon Salad with duck confit begins with slightly bitter frisee tossed with smoky lardons and crunchy croutons in an exquisite bacon and shallot vinaigrette.
